Prep will take up most of your time and cooking will only take 5-7 minutes. Can serve this over Spanish Rice or with fresh corn tortillas
Ingredients
- 2 pounds of fresh large tiger shrimp, peeled and tail off
- 1 whole red onion
- 1/2 garlic clove
- 1/2 cup fresh cilantro
- teaspoon Cayenne pepper
- Salt and Pepper to taste
- 1/2 fresh squeezed lemon juice
- 1 large red tomatoe sliced into wedges
- 4 oz of beer
- Extra virgin olive oil
Steps
- Saute crushed garlic, sliced red onions and beer in large pan on high heat
- Add shrimp and watch color change to a bright red/orange
- Quickly add fresh cilantro, tomatoe and lemon juice
- Add salt and pepper to taste
- After all meat is fried, pour off the grease into a heatproof bowl. Without cleaning the pan, return it to the stove over medium-low heat. Add 1/4 cup grease back to the pan. Allow grease to heat up.
- Serve right away straight from pan to dinner plate alongside Spanish rice or corn tortillas
